Beer Battered Fish & Arrow Root Chips

Description

An excellent comfort meal and an alternative to potato chips that is healthy, fun and delicious that is sure to be enjoyed by everyone, young and old, perfect for a weekend.

Ingredients

Beer Battered Fish
  • 500g Fish fillet (Red/White Snapper)
  • 2 Tbsp Garlic paste
  • Salt & Pepper (To taste)
  • ¼ cup Light soy sauce
  • 2pcs Lemons (Juiced)
  • ½ B Chopped Parsley/ coriander
  • ½ Cup All-purpose flour
  • 2 Tbsp Corn starch
  • 1 tsp mariandazi baking powder
  • 500 ml Beer/ Larger/ Water
Arrow root Chips
  • 2Pcs Arrow root (Cut into Chips)
  • Golden fry Oil
  • Salt & Pepper (To taste)
  • Pinch of paprika

Directions

Season fish fillet with salt & pepper, then marinate with garlic, soy sauce and lemon juice and set aside for at least 25 Minutes.
Place a wok on medium high heat in the meantime.
Then in a separate bowl, mix together flour, corn starch, baking powder and season with salt & pepper. Gradually add beer/ water and whisk until smooth until a thick consistency is achieved then add in chopped herbs.
Dust marinated fish fillets with some flour, deep in the beer batter and deep fry in hot oil for 10 minutes until golden brown and crispy.
Arrow Chip: Add arrowroots and blanch for 5 minutes, drain and allow to chill. Heat oil in a pan/ Wok, Fry blanched arrowroot chips for 8-10 minutes until golden Crispy. Season with salt and a pinch of paprika and serve hot with crispy fried fish.
