Chilli Ginger Beef stir fried Noodles with sesame & avocado

Description

Turn ordinary instant noodles into a restaurant-worthy dish in no time and with easy to source ingredients. This noodle dish is inspired by Chinese stir-fried noodles with the incorporation of beef or your favourite meat and fresh seasonal vegetables.

Ingredients

  • Oil
  • 3 Tbsp Oyster sauce
  • 3Tbsp Light Soy sauce
  • 1Tbsp red wine/ rice wine vinegar
  • ½ Tbsp Sugar
  • 200g Beef Fillet (Sliced)
  • 1pc Ginger (juliennes) + 1 Tbsp Finely minced ginger
  • 3cloves Garlic (Sliced) + 1 Tbsp Finely minced garlic
  • 1pc Bullet chillies (Deseeded, Sliced)
  • 1pc Carrots (Thinly sliced)
  • 1/4pc Leeks (Thinly sliced)
  • 1pc Red Onions (thinly sliced)
  • 2Tbsp Cashew nuts (Toasted)
  • 4pcsSugar snaps (Thinly sliced)
  • Red & Yellow bell peppers (Thinly sliced)
  • Fresh coriander (Chopped)
  • Sesame seeds

Directions

Place sliced beef in a bowl, add 2 Tbsp of Oyster sauce, soy sauce and rice wine vinegar. Add a tablespoon minced/blended garlic & ginger and allow beef to marinate for at least 15 minutes.
Bring water to boil in a pot, add noodies followed by the seasoning and boil for 2 minutes. Strain and run with cold water to avoid sticking. Place a pan/wok on high heat, add 2 Tbsps of oil and sear marinated beef for 2-3 minutes and set aside.
In the same pan, add bullet chillies, ginger followed by garlic and sauté for 30 secs on medium high heat. Add leeks and onions and cook for 30 secs. Cashew nuts followed by the rest of the vegetables and sauté for 1 minute.
Add back the seared beef, season with oyster sauce, soy sauce and ½ a table spoon of sugar mix well. Add boiled noodies, mix well and finish off with toasted sesame seeds.
