Season the lamb chops with salt and pepper In a pan that is over medium heat, add Golden fry oil then melt the butter, add the lamb chops and cook both sides for about 8mins or until well browned. Remove from the pan and set aside.
In the same pan add onions, cook for 1min or until softened then add garlic and ginger, stir well to combine then add the blended tomatoes. Let it cook until the sauce thickens
Add the coconut cream, water, curry powder, garam masala, salt, and pepper, stir well then add the lamb chops. Cover and let it cook on medium-low heat for 5mins Serve garnished with fresh coriander leaves
