Fluffy pancakes with maple cream and crispy bacon

Fun for the family. An indulgent recipe, great for breakfast or brunch.

Ingredients

FOR PANCAKES
  • 1tsp Mariandazi
  • 150g plain four
  • Pinch of salt
  • 1tbs sugar
  • 145ml milk
  • 1 egg
  • Olive gold for cooking
FOR MAPLE BUTTER
  • 6tbs Gold Band
  • ½ cup maple syrup
  • Pinch of salt
  • ¼ tsp cinnamon 
  • ¼ tsp nutmeg

Directions

FOR PANCAKES Add dry ingredients t o a mixing bowl and mix well. Next add wet ingredients, milk and beaten egg. Whisk dry and wet ingredients together until smooth. Make sure no lumps are left.
Heat a non-stick pan to a medium-high heat. To the pan add ½ a tsp of Olive Gold. Once the Gold Band has melted, add one ladle of pancake batter. Lift and tilt the pan in a circular motion to spread the batter around to the size of your liking.
Leave untouched until pancake starts to form bubbles and rise. Once bubbles form, using a spatula, flip the pancake and cook for another 2-3 mins. Repeat process until batter is finished.
FOR BACON Add bacon rashers to a hot pan. Cook until bacon shrinks by a third. Flip and cook until bacon is almost crispy. Set aside on kitchen paper to drain of excess oi (the crisping process will carry on even once off the heat).
FOR MAPLE CREAM Add gold band to mixing bowl and vigorously whisk together with maple syrup. Once a cream like consistency is achieved, add remaining ingredients, and whisk together until well incorporated and fragrant.
