Fried Sukuma Wiki Eggs Benedict

Description

Eggs Benedict is a classic breakfast dish of poached eggs placed over an English muffin (type of bread) complemented with cured meat, fish or vegetables such as spinach, asparagus or even mushrooms then topped with hollandaise sauce. This recipe brings a twist to this classic dish using ingredients which are pocket friendly and readily available.

Ingredients

Hollandaise
  • 2 Egg Yolks
  • 1 ½ Tbsp Red wine vinegar
  • ½ Cup gold band Margarine
  • Salt & Pepper (To taste)
Poached eggs
  • 4 Eggs
  • 1 Tbsp Vinegar
Sukuma Wiki
  • 1 Tbsp Finely minced garlic
  • 1 Tbsp Oil/ gold band margarine
  • 1 Tbsp Oyster/ light soy sauce
  • ½ B Sukuma wiki
  • Salt & Pepper (To taste)

Directions

For Hollandaise: Bring water to boil in a small pot/deep saucepan. In a clean bowl, whisk together egg yolks and a tablespoon of hot water. Place bowl over a pot of boiling water and whisk until frothy. Gradually add melted gold band and whisk until a rich creamy sauce with thick consistency is achieved. Season with salt & pepper and set aside.
For Sukuma Wiki: Heat oil/ margarine in a pan, add chopped garlic and cook for 30 secs. Add Sukuma wiki and sauté for 2-3 minutes. Season with salt & pepper. Add a dash of oyster sauce or soy sauce and set aside.
For poached eggs bring water to gently simmer in a pot/ deep pan. Add a tablespoon of vinegar. Gently add in eggs (one at a time). Cook on low heat for 3 minutes for a soft poached egg and 5 minutes for a well-done egg. Toast your bread of choice and top with sautéed Sukuma wiki followed by poached egg and a generous spoon of hollandaise. Serve hot.
Top with Kachumbari or fresh tomatoes/ chopped parsley
