Description

Ingredients

  • 500grms Goat meat 
  • 2cups Basmati rice
For the meat marinade:
  • ½ cup plain yoghurt
  • 1 tsp garlic, crushed
  • 1tsp ginger, crushed
  • 2tbsp oil
  • 1/4tsp cinnamon powder
  • 1/4tsp turmeric powder
  • 1/4tsp cardamon powder
  • 1/4tsp cayenne pepper
  • 1tsp coriander powder
  • 1tsp garam masala
  • 1tsp paprika powder
  • 1tsp cumin powder
  • 1/2tsp salt
For the rice:
  • 2cups Basmati rice
  • 10 cardamon pods
  • 2 dry bay leaves
  • 10 cloves
  • 1tbsp salt
For the Onions:
  • ½ cup Elianto oil
  • -2large onions. finely sliced
  • Food colour(mix 2tbsp water + ¼ tsp yellow food colour
  • ¼ cup unsalted butter, melted
  • Freshly chopped coriander leaves for garnishing

Directions

Add the meat to a bowl then add all the marinade ingredients. Mix everything then cover the bowl with cling film and place in the fridge for at least 2hrs or until overnight In the meantime fry onions. Add Elianto oil to the pan that is over medium heat. Add onions and cook until they are golden brown
Once onions are ready remove from oil and set aside For the rice, boil 4cups of water then add all the ingredients for the rice.
Cook rice for about 8mins or until it’s 90% done. Remove from heat, strain and set aside To cook the meat, add the meat with all the marinade in a large pot. Place over medium heat, Cover and cook for about 30mins or until the sauce is reduced to half the size that was on the pot.
Give it a quick stir then layer by spreading the onions followed with the rice, in that order Mix food color and water then pour on top of the rice followed by the melted butter. Cover and let cook for 8mins on low heat
Open lid, mix everything then serve garnished with the coriander leaves
