Mboga kienyeji in coconut sauce

Ingredients

  • 3 bunch mboga kienyeji mix (Managu, Terere and spinach)
  • 2 tbsp Elianto Oil
  • 2 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 cup coconut milk
  • ½ cup coconut cream
  • salt to taste

Directions

Wash and Chop mboga kienyeji Fill a large cooking pot with water and let it boil then add mboga kienyeji. Boil for 30mins
Once it’s done, drain and set aside In a cooking pan, add oil then add onion and garlic, cook until fragrant for about 30mins
Next add the chopped tomatoes and cook for 4mins Add the coconut cream and milk, stir well then add the mboga kienyeji
Mix well while stirring then season with salt Serve
