Mini Sesame Prawn Toast

Description

Crispy prawn toast tastes divine when made at home.  A soy and scallion prawn mixture topped on toast and sprinkled with sesame seeds – honestly has to be one of the easiest and best starters you can make.

Ingredients

Prawn Mixture
  • 200g queen prawns, de-shelled & deveined
  • 1 large egg white
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon soy sauce 
  • 1 spring onion, chopped finely
Assembly
  • 3 – 4 slices of sliced white bread
  • ½ cup sesame seeds
  • Sungold oil to fry
To Serve
  • Freshly chopped spring onion
  • Sweet chili sauce

Directions

Blend all prawn mixture ingredients together to a paste and chill for 10 – 15 minutes to overnight (if prepping in advance). Slice bread into triangles. Put sesame seeds into a bowl and set aside. Spread paste evenly across one side of the triangles, about 3/4 to 1 tablespoon for each triangle and dip each piece into the sesame seeds to coat paste evenly. Set aside.
Heat oil in a wok over a high heat until ready. Working in small batches, add triangle paste side down and fry for 1 to 2 minutes. Turnover and cook for a further minute or so till golden brown. Transfer to drain excess oil on a kitchen towel.
Serve hot with a sweet chili sauce & freshly chopped spring onions
