Heat oil on pan and cook mince meat for about 10 min. Remove meat from the pan and add 2 tablespoons of oil and chopped onions. Follow by adding in the spices (cumin, coriander, paprika, and mixed herbs) and cook for a min. Add garlic and and blended or grated tomatoes, followed by the paste. Mix well then add the cooked meat. Allow meat sauce to thicken and cook well for about 5-7 minutes.
Once sauce is ready, take a deep baking tin and start with a spoonful of sauce at the bottom, then a layer of the grilled egg plants, followed by a generous amount of the meat sauce, followed by cheese and then cooking cream spread well. Repeat as many layers as you want. Top layer should finish with cooking cream and cheese.
