Description

If you want to impress, this is the meal to make. Veryrich and indulgent and surprisingly gluten free.

Ingredients

  • 1 kg mince meat
  • 4 large egg plants
  • 1 cup Mozzarella cheese
  • ½ cup Edam cheese
  • 1 cup Cooking cream
  • 4 tablespoons Tomato paste
  • 3 Tomatoes
  • 2 Courgettes
  • 1 Onion 
  • 4 minced cloves of garlic
  • 2 tablespoons mixed herbs
  • 1 tablespoon paprika
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • Olive oil

Directions

Start by preheating oven to 180 degrees. Slice egg plants and placed on a greased baking tray. Season with salt and pepper. Bake for 15 minutes then remove from oven.
Heat oil on pan and cook mince meat for about 10 min. Remove meat from the pan and add 2 tablespoons of oil and chopped onions. Follow by adding in the spices (cumin, coriander, paprika, and mixed herbs) and cook for a min. Add garlic and and blended or grated tomatoes, followed by the paste. Mix well then add the cooked meat. Allow meat sauce to thicken and cook well for about 5-7 minutes.
Once sauce is ready, take a deep baking tin and start with a spoonful of sauce at the bottom, then a layer of the grilled egg plants, followed by a generous amount of the meat sauce, followed by cheese and then cooking cream spread well. Repeat as many layers as you want. Top layer should finish with cooking cream and cheese.
Bake for 20 minutes or until top layer is golden and bubbling.
