Boil noodies according to package instructions. Drain and set aside In a pan, heat oil then add ginger, garlic, green chillies, and onion. cook for about 2mins until fragrant
Next add the green bell pepper and carrot, cook for 3mins Add tumeric, cumin, garam masala, and chili powder, and cook for another 2mins
Add the tomato sauce, soy sauce, salt, and pepper, cook for an additional 2mins then add the boiled noodies, mix everything together until well combined
