Description

Fresh salads are perfect for any time of the day and are a must have with meals as an accompaniment or as a full serving. This recipe takes seasonal local ingredients and merges them to make a wholesome and delicious fresh dish that is loaded with vitality and necessary nutrients needed to keep you active and healthy.

Ingredients

  • ¼ pk Button mushrooms (quartered)
  • 1 Tsp 2 Cloves Garlic
  • 2 Tbsp dark soy sauce
  • 1Pk Mixed Lettuce
  • 1pk Cherry tomatoes (halved)
  • 1pc Tomatoes (wedges)
  • 1pc Avocado (cubed)
  • 1pc White onions (Thinly sliced/ cubed)
  • 1pc Cucumber (Thinly sliced/ cubed)
  • ½ pc Red & Yellow peppers (deseeded, diced)
  • 1Tbsp Dijon Mustard
  • 1 Tbsp red wine vinegar
  • 2Tbsp Honey
  • 2pcs Lemons
  • ½ cup olive gold 
  • Salt & Pepper (To taste)

Directions

Heat Oil in pan, add garlic and sauté for 30 secs then add mushrooms and cook for 3-4 minutes on high heat. Season to taste and set aside.
In a large mixing bowl, Add all fresh ingredients and season well with salt & pepper. In a separate bowl, add mustard, honey, red wine vinegar and whisk thoroughly.
Gradually whisk in olive oil until well incorporated. Top with sauteed mushrooms. Drizzle dressing over salad and serve.
