Pan fried Blackened Cajun Fish with A Mango Salsa & Avocado Cream

Description

Spiced pan-fried flakey fish pairs incredibly with sweet, vibrant mango salsa.  The avocado cream lifts it all together in a quick, absolutely delicious main course that’s ready in minutes. 

Ingredients

Fish
  • 2 large fillets of fish (whichever one you prefer)
  • 2 tablespoons Olive Gold or Sungold
Cajun marinade (makes about 1/3 cup)
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • ½ teaspoon celery salt
  • 1 ½ tablespoons smoked paprika
  • ½ teaspoon cayenne pepper
  • ½ tablespoon ground black pepper
  • ½ tablespoon dried thyme
  • ½ tablespoon dried oregano
  • ½ tablespoon salt
Mango Salsa
  • 2 ripe mangoes, diced
  • 1 small shallot, chopped
  • 1 large handful fresh cilantro, chopped
  • 1 – 2 jalapeños, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon jaggery
  • Salt to taste
Avocado Cream
  • 1 ripe avocado, pitted and peeled
  • 3 tablespoons sour cream
  • 1 tablespoon Olive Gold
  • 1/4  cup fresh cilantro
  • 1 teaspoon apple cider vinegar
  • Salt to taste
To Serve
  • Fresh Cilantro
  • Lemon Wedges

Directions

Rub: Make the sauce in bulk and use on anything & everything!
Mango Salsa: Combine all ingredients and refrigerate till ready to serve.
Avocado Cream: Add all ingredients to a food processor or blend till smooth with a hand blender. Refrigerate till ready to serve.
Fish: Slice the fillet into pieces and brush with 1 tablespoon of oil followed by rubbing with Cajun spice all over each fillet. Allow to marinate for 30 minutes or longer. Heat oil in a cast-iron skillet and pan-fry fish for about 3 – 4 minutes on each side until blackened on both sides.
Serve hot Cajun Fish with Salsa & Avocado Cream.
