Start by preheating the oven to 180 degrees for 10 minutes. Deseed the peppers and chilies and put on a greased baking tray to bake for 15 minutes or until they have softened and cooked completely. Allow to char slightly in the oven for a more intense flavor. (To make this kid friendly, you can opt not to use any chillis)
Once they are ready, take a blender and add the cooked peppers and chili (optional), honey, juice from lemon, garlic, paprika, oregano and vegetable oil and blend.
Once time is up, put in oven to bake for 30-40 minutes. Turn every 10 minutes so that chicken can cook evenly on all sides. This chicken can also be cooked on an outside charcoal grill for more of a smoky flavour or on a cast iron pan. Mix mayo and ketcup and spread on buns. Place lettuce on buns, pickles and tomatoes (optional) and the peri peri chicken and finally the top bun.
