Pineapple and cashewnut fried rice

Description

Ingredients

  • 1cup fresh pineapple, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 2 green chillies, chopped
  • ¼  cup green peas
  • 1 carrot, chopped
  • ¼  cup red bell pepper, chopped
  • 2 cups cooked basmati rice
  • 1tbsp dark soy sauce
  • 1tsp curry powder
  • ½ cup roasted cashew nuts
  • 2 green onions, chopped
  • salt and pepper to taste
  • 2tbsps Golden fry oil

Directions

In a pan, heat oil then add onion and garlic. Saute for 1min until fragrant
Next add the peas, carrots, red bell pepper, and green chillies, and cook for 5minutes while turning until the vegetables are soft
When the vegetables are ready add the cooked rice and mix everything well then add soy sauce, curry powder, salt, and pepper, continue stirring until well incorporated
Add the pineapple chunks and cashew nuts, mix everything over low heat
Finish with chopped green onions and serve
