FOR PIRI PIRI SAUCE Over an open flame or in the oven, roast peppers, jalapenos, and garlic until charred. Once nicely charred, let them steam in a plastic container or zip lock bag. Once steamed, peel most of the charred skin off, leaving some to add a smoky flavor.
In a food processor, blend up the charred peppers jalapenos, and garlic; adding the remaining ingredients 1 by one as you blend. Season with salt and pepper, then set aside (reserving some to marinate chicken).
FOR CHICKEN Marinate chicken in prir piri sauce for half an hour. Pat dry with a kitchen towel, before using beaten egg to coat the chicken with seasoned flour. Once well coated, shake off excess flour before frying for 8-12 minutes. Once golden and cooked through, set aside to drain on kitchen paper.
FOR SANDWICH Slice buns and toast. To assemble, begin with toasted bun, followed by arugula and sliced tomatoes (season tomatoes with salt and pepper). Next, add the chicken and top it off with piri piri sauce and cheese. If you don’t have a culinary torch, you can set your oven to broil to melt the cheese.
