Prawns in a coconut lemongrass sauce

Description

A rich, saucy and spicy plate of sea-food goodness! This would be perfect over a steaming plate of rice,pasta or naan.

Ingredients

  • 2 tablespoons Sungold Cooking Oil 
  • 500 grams prawns 
  • 4 cloves Garlic 
  • 1/2 teaspoon of ground Ginger 
  • 1/2 finger of Lemon grass 
  • 1 tablespoon Paprika 
  • 1 tablespoon Cumin 
  • 1 tablespoon Coriander 
  • 1 tablespoon of curry powder 
  • 1/2 teaspoon on paprika
  • 1 Lemon  
  • 1/2 cup of coconut cream 
  • 1 cup of water
  • 1 chopped Onion
  • Peppers
  • Parsley/cilantro/dhania
  • Butter

Directions

In a hot pan, add 2 tablespoons of oil and cook your clean prawns until they are curled and pink. Sprinkle some fresh lemon juice. Remove and set them aside.
Saute the onions until almost golden brown and add in the ginger and garlic. Cook until nice and fragrant. Add in the spices, including the curry powder, coriander, cumin, paprika, and turmeric.
Allow these to cook for one minute. Add in the coconut cream, water, and lemongrass. Allow it to simmer for up to 15 minutes until nice and thick.
Add the prawns back in and drop in the butter. Cook for about 3 minutes. Add in the pepper and dhania to garnish. Enjoy!
