A healthy lunch or dinner option that is not only delicious but also calorie friendly.
Ingredients
100 ml Sungold
1 cup of Boiled Chickpeas
6-8 leaves of Lettuce
1 Cucumber
6 tablespoons of Vinegar
1 fresh lemon
Pinch of salt
Black pepper
1 chopped Red onion
5 tablespoons of Mayonnaise
1 tablespoon of Honey
Chilli flakes
Directions
Step 1
In a pan on high heat, add 1 tablespoon of oil and add in the chickpeas. Toss the Chickpeas and allow them to roast on high heat until golden brown.
Step 2
Soak the chopped onions in vinegar for about 10 minutes to get rid of the pungent smell and taste. Chop the lettuce roughly. Combine the onions, cucumber, lettuce, and roasted chickpeas.
Step 3
Combine mayonnaise, fresh lemon juice, honey, salt, black pepper, and chili flakes. Pour the mixture over the salad and combine. Chill and serve!
