Roasted Tomato with spinach & Mozzarella wholewheat Toast/ Mushroom with Avo Open sandwich

Description

An easy healthy sandwich, that can be enjoyed as late breakfast (brunch) or light lunch.

Ingredients

Roasted Tomato, spinach & Mozzarella Toast
  • 4 Slices Whole wheat Toast (Or preferred alternative)
  • Gold band margarine
  • 3 cloves garlic (2 whole, 1 Finely chopped)
  • 1 Large Tomato (Sliced)
  • 1B Spinach (Roughly chopped)
  • ½ B Fresh Basil (optional)
  • 1 pc Fresh Mozzarella 
  • Salt & Pepper to taste
Mushroom With Avo Toast
  • 4 Slices White/Brown Toast
  • 1 Medium sized avocado (Sliced/ Mashed)
  • ½ Punnet button mushrooms (Quartered)
  • 2 cloves Garlic (Finely chopped)
  • 2Tbsp Dark soy sauce
  • Salt & Pepper
  • ¼ B fresh Parsley (chopped)

Directions

Roasted Tomato, spinach & Mozzarella Toast
Preheat your oven to 180 degrees. Spread gold band margarine on sliced bread and lightly toast in a pan/oven for 3-4 minutes. Rub toasted bread with garlic and set aside. Heat a tablespoon of gold band margarine in a pan and lightly sauté chopped garlic.
Add spinach and cook on medium high heat for 2 minutes. Season with salt & pepper. Spoon a layer of sauteed spinach on toasted bread, Add sliced Tomatoes and mozzarella cheese. Season with salt & Pepper. Place layered toast in the oven for 4 minutes until cheese melts. Serve hot.
Mushroom With Avo Toast
Spread gold band margarine on bread and toast lightly. Rub garlic (for extra flavour) In a hot pan, add oil and garlic and cook for 30secs. Add Mushrooms and sauté on high heat for 3 minutes. Add a splash of dark soy sauce and mix well.
Season with salt & Pepper. Sprinkle fresh parsley. Place a layer of avocado on toasted bread and season well with salt & pepper. Add sauteed mushrooms and serve.
Suitable for vegetarians and ideal snack for anytime of the day.
