Thai Basil, Lime & Coconut Prawn Noodles

Description

My favourite flavour combo, the licorice tasting like thai basil, lime and coconut complement each other leaving you with a super creamy, bouncy noodle fusion dish.

Ingredients

  • 1 packets Noodies noodles
  • 2 tbsp vegetable oil
  • 3 garlic cloves, finely chopped
  • 1 inch ginger, grated
  • 2 dried chillies, cut into pieces 
  • 250g prawns, peeled & deveined 
  • ½ tsp chilli flakes
  • 3 tbsp fish oil
  • 3 tbsp coconut milk 
  • 1 tbsp jaggery
  • 2 tbsp lemon juice
  • Handful of Thai basil 
  • ½ cup finely sliced spring onion (scallion)

Directions

Prepare your noodles according to the packet instructions
Heat the vegetable oil in a wok or frying pan over high heat.
Add the garlic, ginger and chillies and stir-fry for 20 seconds. Then add the prawns and chilli flakes and stir-fry. Add the coconut milk, fish oil, jaggery and stir for about a minute add the lemon juice and Thai basil, once the Thai basil is wilted. Toss the noodles in, garnish and serve
