Thai Red Curry Tofu Rolls

Description

Spicy, crispy coated tofu in delicious reduced red curry sauce stuffed in a grilled bun, sprinkled with some spring onions – nothing quite like this!

Ingredients

For the Filling
  • 1 packet tofu, julienned, coated with corn starch and fried
  • 1 tbsp butter
  • 1 tbsp Soya Gold
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp green chillies, chopped 
  • 2 tbsp red curry paste 
  • 2 tbsp coconut cream
  • 2 tbsp sesame seeds
  • 2 spring onions, chopped 
For the Buns
  • 4 breakfast/hot dog rolls 

Directions

Coat your tofu with cornstarch, salt and pepper, and deep fry until crispy.
In a pan, melt some butter, add garlic, ginger and chillies, once fragrant add the red curry paste and cook it for 2 minutes. Add the coconut cream and let the sauce thicken. Once thickened toss the tofu in.
Spread the outsides of the buns with softened butter. On a griddle over medium-high heat. Toast the buns for about 30 seconds on each side, or until golden brown.
Fill each bun with the filling, garnish with sesame seeds and spring onions and serve
