Toffee Mandazi

Description

This recipe is an elevation of simple mandazi which is an all time favourite tea time snack for many East Africans. These mandazi are rich and fluffy with a generous glaze of homemade toffee which turns this simple local delicacy into a decadent dessert.

Ingredients

  • 1 cup All-purpose flour
  • 1 ½ tsp mariandazi baking powder
  • ¼ cup Sugar
  • 1 tsp Salt
  • ½ tsp Nutmeg /Cinnamon powder (optional)
  • Cardamom powder(optional)
  • 3 eggs
  • 1 ½ cups Milk (warm)
  • 3 Tbsp Gold band margarine (Melted)
Toffee sauce
  • ½  cup castor/white Sugar
  • 2 Tbsp Gold band margarine 
  • 3 Tbsp  Heavy Cream

Directions

Sift together flour, baking powder, salt and spices (if using). Add Sugar and mix well. Mix together eggs, warm milk and melted gold band margarine.
Add the wet ingredients gradually to the dry ingredients and mix well until a thick sticky dough is formed. Knead the dough gently on a floured surface until the dough loses the excess moisture/ stickiness. Place dough back in a bowl to allow it to rest/soften up for at least 20 minutes.
In the meantime, add oil in a wok and place on medium high heat. Place rested dough on a lightly floured surface and roll to an inch thick sheet. Cut into desirable shapes and gently fry until golden brown and fluffy.
Toffee Sauce
Place a pan on Medium high heat, add sugar and ¼ cup of water and allow to boil. Reduce heat low and let the sugar solution gently simmer until thick and begin to caramelise.
Add Gold band margarine, mix thoroughly and finish off with cream. Glaze mandazi in the toffee sauce and serve with tea or coffee.
