Ingredients

  • Pancakes
  • 1 large banana
  • 2 tablespoons Olive gold + extra for brushing
  • 1 ½ cup oats
  • ¾ to 1 cup coconut milk + more if batter too thick
  • 1 tablespoon brown sugar (optional)
  • 2 teaspoons Mariandazi baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Espresso syrup½ cup brown sugar
  • ½ cup water
  • 1 ½ tablespoon ground instant coffee

Directions

Put all ingredients into a blender and blitz into a batter. Add a tablespoon at a time of extra coconut milk if needed if the batter is too thick
Heat a skillet on a medium heat and brush with olive oil. Pour batter with a small measuring cup and cook for about 1 – 2 minutes on each side. Serve with espresso syrup or honey & sliced bananas.
Espresso syrup: Combine all ingredients in a pan over a medium heat and bring to a boil. Simmer on low until reduced and thick.
