Cheesy Baked Loaded Sweet Potatoes

Description

This quick recipe is a great way to enjoy sweet potatoes differently and is a wonderful party snack which requires very minimal effort for last minute hosting or when you simply want to explore a unique way of preparing this local favourite.

Ingredients

  • 2pcs Sweet Potatoes (Cleaned, whole)
  • Oil
  • 1 pc Red Onion (Sliced)
  • 1pc White Onion (Sliced)
  • 3 cloves garlic (Chopped)
  • 3 pcs Spring Onions (Chopped)
  • ½ cup Cheddar cheese (grated)
  • Salt & pepper (To taste)
  • ½ tsp Nutmeg
  • 1B Fresh Coriander 
  • 6pcs Bacon (Grilled

Directions

Preheat the oven to 180 degrees Celsius. Season Sweet potatoes generously with salt, Pepper and nutmeg.
Drizzle oil and wrap with foil paper. Bake sweet potatoes for 20-30 minutes until soft/ cooked all the way through.
Heat oil in a pan, sauté red & white onions for 4 minutes on medium high heat until slightly caramelised. Add garlic and cook for 30 secs.
Add bacon and chopped herbs, season and set aside. Split cooked sweet potatoes lengthwise in the centre but not all the way through and add slices of cheese then top with sauteed onions & Parsley.
Place back in a warm oven or heat in a microwave to melt the cheese. Serve hot with a choice of sauce.
