Ingredients

  • Boneless Chicken (cut into cubes)
  • 3/4 cup of roasted cashew nuts
  • 3/4 cup of cooking cream
FOR THE SPICE BLEND
  • 1½ tsp Cumin
  • 2tsp salt
  • 1 tbsp garam masala
  • 2 tsp minced garlic
  • 1 tsp minced ginger
  •  2 tsp paprika
  • ½ tsp turmeric
FOR THE SAUCE
  • ½ Lemon Juice
  • 2 tsp tomato paste
  • 4 grated tomatoes
  • 2 tsp ground coriander
  • 1 large onion
  • 2 tbsp chopped Dania stems
  • 2 cups cooking cream
  • Sungold Lite

Directions

Marinate the chicken with half the spice mix, and Lemon juice for 2-4 hours or preferably overnight. Sear chicken on a hot pan to lock in flavors. In a cooking pot add Sungold lite chopped onions and Dania stems
Once the onions are translucent add in, minced garlic and ginger. Cook until the garlic is fragrant. Add in the grated tomatoes and tomato paste and mix for 2 minutes. Blend your roasted Cashew anute with 1 cup of cooking cream and add the blended mixture to the cooked tomatoes.
Add in and seared chicken plus the remaining cooking cream. Cover and let it simmer on low heat until the chicken is cooked through with Naan/ Rice
Serve with Naan/Rice and enjoy.
