Double Chocolate Cupcakes

Description

Moist cupcakes that are as effortless to make as they are delicious. Perfect for afternoon tea or as a rich dessert when frosted with fresh cream or chocolate ganache

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ cup dark/ milk chocolate (roughly chopped)
  • ½ cup milk
  • 1 tsp table vinegar
  • 2 eggs
  • ¼ cup yoghurt/ heavy cream
  • 1/3 cup vegetable oil
  • ¼ cup hot coffee
  • 1 tsp vanilla essence

Directions

Pre-heat oven to 180 degrees Celsius. Mix together milk and vinegar and set aside for 5 minutes to curdle.
In a large bowl Sift together all dry ingredients and mix in sugar. In another bowl, mix together wet ingredients until incorporated.
Add the wet ingredients to the dry ingredients and gently mix with a whisk/ wooden spoon.
Pour mix in muffin/ cup cake tins lined with paper cups and bake for 15-20 minutes.
Serve with a hot beverage of your choice or as dessert.
