Description

A fun way to add some sophistication to classic kuku choma.

Ingredients

  • 3 chicken quarters
  • 2tbs salt
  • 1Liter Olive Gold
  • ½ cup lemon juice
  • Leeks
  • Spring onions
  • White onions
  • Garlic
  • Carrots
  • Fresh thyme
  • Peppercorns
  • Saffron

Directions

Line a large baking dish with chopped vegetable. Next top the veg with cleaned chicken. Submerge the chicken with olive gold and lemon juice. Add aromatics; saffron, peppercorns, thyme, and garlic.
Preheat the oven to 150degrees. Cook chicken for 3hours or until chicken is almost falling off the bone.
Remove chicken from oil and pat dry. Finish chicken off by flame grilling for approximately 2-5 minutes per side.
Discard veg and aromatics, reserving aromatic oil to use for future cooking.
