Herb Marinated Chicken Legs Served with grilled plantains

Description

Who doesn’t love a good roasted chicken dish especially one which is flavour-packed and requires no effort at all? This dish only needs time during marination, preferably left to soak up all the flavour overnight or at least a couple of hours ahead of time for the best results.

Ingredients

  • 1 Bulb Garlic
  • 1B Parsley
  • 1B Coriander
  • 1 tsp Salt
  • ½ tsp Black pepper
  • ½ tsp Cayenne Pepper (Optional)
  • ½ cup Lemon Juice 
  • ¼ cup Dark Soy sauce 
  • ½ tsp Turmeric
  • ¼ cup Sun gold 
  • 1 kg Chicken Legs
  • 6 pcs Plantains (Halved, skin on)

Directions

Mix all ingredients (except soy sauce & plantains) and blend until smooth. Reserve ¼ cup of the blended herb mixture for the plantains. Add soy sauce and mix well.
Marinate chicken legs for at least 30 minutes, Heat oil in a pan, Sear chicken legs for 3 minutes on each side until skin is golden and crisp.
Place on a baking tray and roast chicken for 25 minutes at 180-185 degrees Celsius.
Plantains – Split plantains lengthwise and add reserved blended herb mixture. Sear on a hot pan for2 minutes.
Roast in the oven together with the chicken for 10- 12 minutes. Serve hot.
