FOR SYRUP In a pot add equal parts water and sugar. Simmer until sugar is completely dissolved. Remove from the heat and add dried hibiscus and let steep for half an hour (or overnight).

FOR PINK MULE Fill a large wine glass or goblet with ice. Build your cocktail by first adding gin, followed by hibiscus syrup. Next top up the glass with tonic water. Add three slices of thinly sliced cucumber and garnish with dried hibiscus.
