Mushroom fried noodles

Description

This is a great recipe for any time one feels uninspired to cook but in need of a hearty, budget friendly dish  that takes little to no time. Great for vegetarians butfeel free to add meat or seafood to elevate it even more.

Ingredients

  • 3 cloves Garlic (Finely chopped)
  • 1 pc Ginger (Thinly sliced)
  • ½ cup Button mushrooms (Quartered)
  • ¼ cup Light soy sauce
  • 2 Tbsp Oyster sauce
  • 1 Pc White onions (Sliced)
  • 1 Pc Bullet chilli (Deseeded, sliced)
  • Mixed peppers (Sliced)
  • 1 Egg
  • 2-3Pcs Spring Onions (Sliced)
  • 1Tbsp Honey
  • 1 Tsp Sesame seeds
  • Noodies

Directions

Boil water in a medium sized pot, add noodies and cook for 2 minutes. Strain and run with cold water then set aside.
Heat Oil in a pan/ Wok. Add ginger, garlic and bullet chilli and sauté on high heat for a few seconds.
Add Sliced Onions, sauté, followed by mushrooms, spring onions/leeks and cook on high heat for 2-3minutes. Season with soy sauce and oyster sauce then add the remaining vegetables and sauté for a further 2 minutes.
Add boiled noodles and mix well. Top with a fried egg, sprinkle with some toasted sesame seeds and fresh spring onions.
