Onion & Bacon Frittata

Description

A unique yet very simple recipe that is sure to excite your loved ones or even yourself for breakfast with this combination of potatoes and eggs. Feel free to experiment with different ingredients which will make this dish even more exciting.

Ingredients

  • 1 Red Onion (Chopped)
  • 2 Cloves garlic (Finely Chopped)
  • 1B Fresh Coriander
  • 6 Eggs (Beaten/whisked)
  • 4 rashers bacon (optional), cooked
  • 2 Potatoes (Sliced)
  • Salt & Pepper (To taste)
  • 1 tsp paprika Powder

Directions

Heat oil in a wok/pan, and deep fry potatoes until golden and crispy. Season with salt, pepper and paprika. Set aside
In a separate pan, drizzle oil and sauté onions for 34 minutes on medium high heat. Add garlic and sauté for 30 secs.
Add chopped cooked bacon followed by coriander. Toss for 30 secs and add to your beaten eggs. In the same pan, layer potatoes with the heat on low.
Add the eggs with the bacon & onion mix to the potatoes. Cover and cook for 10-12 minutes on very low heat until eggs are cooked through.
Slice and serve hot.
