Souffle pancakes with chocolate ganache

Description

‘Melt- in- your- mouth’ pancakes that are the perfect weekend treat for your loved ones and are a great way to learn how to make a meringue which is a labour of love but worth the effort.

Ingredients

Pancakes
  • 6 Eggs Separated (6 Whites, 3 Yolks)
  • 4 Tbsp Sugar
  • 1 cup All-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ¼ cup cream (optional)
  • 4 Tbsp Gold band margarine (Melted)
Chocolate Ganache
  • 150g dark chocolate
  • ¼ cup cream
  • 1 Tbsp Gold band margarine (Melted)

Directions

In a clean, wide bowl, Whisk egg whites until frothy. Gradually add in sugar and whisk thoroughly until stiff peaks form.
In a separate bowl, sift together flour, baking powder and salt. Mix together the wet ingredients into the sifted flour (3 egg yolks and milk). Gently fold in the egg whites into the flour mixture. Add melted gold band.
Place a pan on medium high low heat. Scoop batter onto a heated pan and fry pancakes for 2-3 minutes on each side.
Ganache
Melt chocolate in a bowl. Add cream/milk and mix thoroughly until incorporated. Add melted gold band and mix well. Spoon chocolate ganache over hot pancakes.
Top with fresh berries, chocolate chunks or bananas.
