Spicy cassava fries

Description

Ingredients

  • 4 Cassava
  • 3 cups Sungold oil
  • ½ tsp Cayenne pepper
  • ½ tsp paprika powder
  • ½ tsp salt
  • ¼ tsp chili powder
  • 1 lemon zest
For the sauce:
  • ½ cup mayonnaise
  • ½ cup ketchup
  • 3 tbsp hot sauce

Directions

In a small bowl mix cayenne, paprika, chili and salt. Set aside In a small bowl, mix mayonnaise, ketchup and hot sauce. Set aside
Peel the cassava,wash and pat dry with a kitchen towel Slice cassava into long sticks Add oil to frying pan, heat until hot then add the cassava and fry for about 5-10mins or until evenly golden brown
Remove from hot oil and let drain on kitchen towel Sprinkle with the mixed spices and lemon zest Serve with the mayonnaise sauce
