Spicy Mango BBQ thighs with plantain and honey mustard dip

Ingredients

  • 2 ripe mangoes
  • 1 bunch Plantain
  • 1 kg Chicken thighs
  • 3 tablespoons Honey
  • 3 tablespoons Soy sauce 
  • 4 minced cloves Garlic
  • 3 tablespoons Chilli sauce
  • 1 tablespoon turmeric
  • Fresh ginger
  • Vegetable oil
For the dip
  • 3 tablespoons Yellow mustard
  • ½ cup Mayonnaise 
  • 1 tablespoon honey

Directions

Start by seasoning chicken thighs with turmeric, half of the ginger and garlic. Marinate for 30 min. Preheat oven to 180 degrees.
Follow by peeling and chopping mangoes into large cubes and put in blender. Add honey, chilli sauce, soy, and remainder of garlic and ginger. Blend until smooth. On a cast iron (any oven proof pan) heat vegetable oil and add chicken thighs to brown. Pour over half the sauce and put in oven to bake for 30 minutes. Half way through baste with the leftover sauce.
Peel and slice plantain and fry in vegetable oil. For the dip, mix mayo, honey and mustard.
