Spinach, Shrimp and Mozzarella Pasta

If you like ordering pasta and shrimp in restaurants, you may want to try this easy recipe at home that will save your coins!

Ingredients

  • 4 fillets 
  • 3 tbsp butter 
  • 1 medium onion, diced 
  • 2 garlic clove 
  • 300g roasted peppers, chopped  
  • ¾ cup heavy cream/coconut cream 
  • ½ cup grated Parmesan cheese 
  • salt and pepper 
  • chopped parsley to garnish 

Directions

Melt 2 tbsp. of butter in a large, non-stick skillet and fry the fish for 3-4 minutes on each side, until cooked through.
Season the fillets with salt and pepper, remove them from the skillet, and set them aside. To the same pan, add the remaining 1 tbsp of butter and onion and saute for 5 minutes.
Add garlic, chopped, and pureed roasted peppers, and keep cooking for another 5 minutes. Add heavy cream and Parmesan cheese. Turn off the heat, stir, and taste if the sauce needs more salt.
Return the fillets to the pan and cover them with sauce. Garnish with chopped parsley and grated Parmesan cheese.
