Strawberry lemon poppyseed pancakes

Description

Perfect weekend pancake recipe. Ideal for those easySunday Mornings that everyone will love.

Ingredients

  • 2 cups Self raising flour
  • 5 tablespoons melted Unsalted butter
  • 1 cup Milk
  • Handful Poppy seeds
  • ¼ cup Sugar
  • 2 Eggs
  • Zest& Juice from 1 lemon 
  • 1 tablespoon vanilla essence
  • Vegetable oil
For the sauce
  • 1 cup strawberries
  • ¼ cup sugar
  • 1 cup water

Directions

Beat eggs in a bowl and add milk. Add in sugar and whisked flour and mix well. Add the essence, lemon juice, zest, melted butter and poppy seeds. Fold into mixture.
For the sauce, put strawberries, sugar and water in a small pot and cook on medium heat. Smash strawberries as they cook and caramelize. Sauce will take about 5-10 minutes to thicken.
Cook pancakes on a non stick pan using a tablespoon of oil for each. Once the bubbles begin to form, flip and cook on the other side. Serve fluffy pancakes with strawberry sauce on top.
