Tilapia Stew

Description

Ingredients

  • 1 Whole Tilapia Fish, Cut into 4 sections
  • 3 Tbsp Golden Fry Oil
  • 2 cloves garlic, minced
  • ½ cup coconut milk
  • 3 medium size tomatoes, blended
  • 2 Tbsp tomato paste
  • 1 Red, Yellow and Green bell pepper, sliced
  • 2 Green chillies, chopped(optional)
  • Salt and pepper to taste
  • 1 tbsp fresh coriander to garnish

Directions

Heat oil in large pan. Add onion and garlic, cook until fragrant about 3 mins
Add diced tomatoes and tomato paste, cook for 2 mins then proceed by adding coconut milk. Give it a stir and allow the sauce to cook for about 3 mins
Add the sliced bell peppers and green chillies, season with salt and pepper then add the fish.
Cover and allow fish to simmer for 10-12 mins over medium heat. About ¾ of the way carefully turn the fish, if the fish hasn’t been fully immersed in the stew
When done, garnish with fresh coriander leaves and serve
