Traditional Ndengu/Lentil Curry

Description

Ingredients

  • 2 cups boiled ndengu
  • 1 medium onion, chopped
  • 2 garlic cloves, crushed
  • 1/2tsp ginger, crushed
  • 1tsp curry powder
  • 1tsp cumin powder
  • 1/2tsp turmeric powder
  • 3 medium tomatoes, blended
  • 1 cup coconut cream
  • 1 cup water
  • salt to taste
  • Elianto Oil
  • Fresh coriander leaves to garnish

Directions

On your pan, heat Elianto oil, add the onions, garlic and ginger. Cook for 2mins or until fragrant
Add the blended tomatoes and cook for 3mins or until thick sauce.
Add the boiled lentils and coconut cream, mix well then add water, curry powder, cumin and turmeric powder, stir then cover and let cook over low heat for 5mins
Garnish with fresh coriander leaves and serve!
