White Chocolate bread pudding

Description

A fun way to convert leftover over bread into a delicious warm, creamy dessert that can be served with custard or your favourite ice cream

Ingredients

  • Brioche/ white bread (Diced)
  • 3 Tbsp Gold band margarine 
  • 2 cups Milk
  • ½ tsp salt
  • 1/3 cup Cream
  • 3 whole Eggs
  • ½ cup White sugar
  • 1 tsp Vanilla essence
  • 1 cup White chocolate

Directions

Slice bread into medium sized dices and toast for 10-12 minutes at 120 degrees. Once bread is toasted increase the heat to 180 degrees.
In a sauce pan/pot, Add Milk, cream, gold band margarine, sugar, salt & vanilla essence. Bring to a boil. Set aside and allow to cool slightly before gradually adding in the eggs. Whisk until combined.
Place mixture back on very low heat for 2-3 minutes until custard comes to a gentle simmer then add some diced white chocolate. Grease a bread mould with gold band margarine then add toasted bread, add more diced white chocolate chunks.
Pour warm custard over bread and bake in the pre heated oven for 30minutes. Allow pudding to cool slightly before unmoulding.
Melt some white chocolate in a microwave and drizzle generously over pudding. Garnish white chocolate bread pudding with fresh berries and mint.
